Crock Pot Lentil Soup (Weight Watchers Recipe)

I am never making lentil soup on the stove top again! This is an insanely easy recipe and took very little time to prepare. You can make this in a regular Crock-Pot like I do in this post, or in the Instant Pot on the slow cook function. I altered the recipe slightly, and wouldn’t change a thing.
2 medium organic carrots, peeled, cut into large chunks
2 ribs (medium) organic celery, cut into large chunks
1 medium organic onion, cut into large chunks
2 cloves organic garlic cloves, minced
2 cups dry organic lentils, picked over
1/2 tsp dried organic thyme
1/2 tsp salt, or to taste
1/4 tsp organic black pepper, or to taste
6 cups organic chicken broth (I use Imagine brand, as it’s the only one that uses filtered water)
2 cups water
Place ingredients in a 4- to 5-quart slow cooker in the following order: carrots, celery, onion, garlic, lentils, thyme, salt, pepper, broth and water. Cover slow cooker; cook on low setting for 6 hours. Yields about 1 1/2 cups per serving.

I really don’t see why you couldn’t half it! I’m sure you could always freeze any extra, should you choose to make the whole recipe and have too much. Hope that helps!

Hi Hope. The original recipe has a 5 PointsPlus value. I’ve omitted the Canadian bacon and 2 cups of the chicken broth from the original recipe, which would affect the PointsPlus values. Unfortunately since I don’t follow Weight Watchers, I wouldn’t be able to give you the final value. Sorry!
You don’t soak the lentils overnight at all? They aren’t chewy at all?

I don’t believe lentils need to be soaked at all (I never have), however you definitely don’t have to for this recipe. They come out perfect in the crock pot. Hope that helps!

I added chopped up cabbage instead of the celery and used vegetable broth instead of chicken. I will definitely add the cumin!
Made this yesterday and was REALLY disappointed. It had NO flavor. Will NOT make this again.
Just made the original recipe with a little black truffle olive oil on top and it’s so delicious! I will try it like this, too!
